This has to be one of my favorite appetizers! It’s not too hard to make and its very healthy. Plus, you look like a super chef walking in with these 🙂 I made these for a holiday party so I made a LOT more than I usually do! See the recipe below and let me know what you think!!!

Roasted Pears with Gorgonzola- Serves 6

3 ripe but still firm pears 

1 bag of arugula 

3 ounces crumbled gorgonzola 

1/4 cup dried cranberries

1/4 cup walnut halves, toasted and chopped

1/2 cup apple cider

3 tablespoons port

1/3 cup light brown sugar

1/4 cup olive oil

Salt and pepper to taste 

Preheat the oven to 375 degrees F.

Slice pears lengthwise into halves. Remove the core and seeds from each pear, leaving a round whole.Toss pears with lemon juice to prevent them from turning brown. Arrange them in baking dish. 

Mix gorgonzola, dried cranberries and walnuts in a small bowl. Divide the mixture among the pears.

In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake pears for 30 minutes, or until tender. 

Whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Place pears on top of arugula and drizzle each pear with some of liquid, sprinkle with salt and pepper and serve warm.
